Focacia - wheat bread 



Ingredients
Quantity
Whole wheat
200 gms
Maida (Flour)
50 gms
Fresh dry yeast
10 gms - 2 teaspoons
Sugar( prefer raw or brown)
15 gms
Milk or curd
50 to 60 ml / gms
Water (warm)
80 ml
Fat - ghee
10 to 15 ml
Salt
1 teaspoon
Note:
Whole wheat flour, maida, salt are termed as dry ingredients in the recipe below




Focacia mix veggies:
Sliced onion ( small)
Red and green capsicum sliced
Olives sliced
Spring onion greens
Parsley/ thyme/ rosemary - dry pr fresh as per your choice and availability

1 teaspoon chopped garlic
1/2 teaspoon chili flakes ( optional)
1/2 teaspoon black pepper
Can add green chilly too if prefer a spicy taste
Grated Cheese - optional
Mix all in a bowl and keep aside




Process
  1.      Sieve the flour once ( adds to the sponginess of the bread)
  2.      Always decide your baking tray before you start the process.
  3.      Set your dry ingredients in a bowl.
  4.      Now take the yeast, sugar in a bowl and add the warm water to it. The yeast will activate in about 10 minutes. Weather conditions vary the activation process.
  5.      Once the yeast is ready, you make mix it to the flour evenly and start kneading the dough. Add in milk ( lukewarm) to the dough. Can add in 1 teaspoon of ghee now while kneading. So at this point we are mixing all the ingredients well and the dough need not look very smooth.
  6.      Cover the dough with cling wrap or moist cloth and rest for 2 hours in a warm place.( In warmer climate even 1 hour is enough)
  7.      At this point you can set the focacia mix veggies in a bowl.
  8.      Brush the baking pan with some olive oil and dust some flour on it and set aside.
  9.      Once the dough has doubled in size, it is ready for the next step. Dust some dry flour and knead again till smooth. Can add remaining ghee at this time. Once knead for 5 minutes it is ready to be set.
  10.    Keep the dough in the greased baking tray, flatten it and make some depressions add the vegetable mix. Brush some olive oil and set asidee again for 15 minutes in warm place
  11.     The dough would have risen by an inch or so and is now ready to go in the oven.
  12.     Bake for 25 minutes at 190 degrees in a preheated oven. Once done, can again brush some olive oil on top and serve with 💜

    This bread can be stored in a cool place for 3 days.
